German Potato Salad

Today we had a Labor Day picnic at Martha and James' house. This is what I often make for our picnics because it is very well liked by people. This is a recipe that my mother in law gave to me. It is very yummy!

German Potato Salad

1 bag potatoes
1 C vinegar
1 C water
1/2 C sugar
5 hard boiled eggs
2 rounded TBS of flour
1/4 tsp pepper
1 package bacon, cut up (save drippings)
sliced vidalia onion (I put less than 1/4 cup)

Cook potatoes in salt water, drain. Cut up bacon and cook. Combine bacon drippings, vinegar, and water in a saucepan. Mix sugar, flour, and pepper and whisk into liquids in saucepan. Heat over med heat until it thickens. Layer potatoes, sauce, bacon, eggs (save 2 eggs to slice for top), onion. Gently toss.

I have tasted other German Potato Salads and this one is the best in my opinion, although it may be Americanized...I wouldn't know. Anyway, I think the recipe came from my Mother-in-law's mother. I'm pretty sure they moved here from Germany, and I think it was the Germany in Europe. ;)

It looks very good. I have never tried making German potato salad. My husband's grandmother made it often. Maybe I will have to try it!

I just found out that Dave's German grandma got it from her American friend...so Dunja is right. It was the Germany right here in the U.S. I still think it's yummy, although maybe the name should be changed to American German Potato Salad.

For whatever its worth, I thought it interesting and the potato salad yummy.

Sounds like a tasty change from my usual potato salad!
I remember making some variation of this for a German Club meal in high school.
